1, 2, or 3 strings of 2 panels wired in series for 500, 1000, or 1500 watts respectively. All optimal, 1500 max.4480W PV, MNE175DR-TR, MN Classic 150, Outback Radian GS4048A, Mate3, 51.2V 360AH nominal LiFePO4, Kohler Pro 5.2E genset.

wouldnt my VOC 37.92 exceed the MAX SOLAR VOLTAGE if I series my panel?
This inverter is a bit bad, since its rated at 2400w but cant accept a pv of 2400w... this unit will have a hard time charging a
1x - 24v 200AH battery...
let alone... a
2x - 24v 200AH battery

Be aware this inverter REQUIRES a 24V battery bank.
AND, that 2 panels in series will be very close to the "Device Burns Up" voltage of 75V, and the first cold morning will likely fry it,
That's the Voc #
Charger = 75V
Panel = 37.92v x 2(in series) = 75.84v Boom !

But with the average low in winter being 73F, you are close to exceeding the limits. Only takes a few minutes and it's fried.

would the 75.84 reach even in the early morning?
The sun isnt even shining directly at the panel?

I would not recommend using those panels with that charger/inverter.
Your panels are unlikely to produce 30 volts when hot as singles and in pairs the VOC would be too high. They set the upper limit to protect sensitive electronics. The panels will produce the higher voltage even without direct sunlight.
If you can give us the exact brand of panels we could look for Normal Operating Cell Temperature (NOCT) values for you.
Home system 4000 watt (Evergreen) array standing, with 2 Midnite Classic Lites, Midnite E-panel, Magnum MS4024, Prosine 1800(now backup) and Exeltech 1100(former backup...lol), 660 ah 24v Forklift battery(now 10 years old). Off grid for 20 years (if I include 8 months on a bicycle).
- Assorted other systems, pieces and to many panels in the closet to not do more projects.
