With 200ah@12v batteries, you could do 2 strings of 4 batteries (eight total) for 400ah@48v, ~19kwh.
That gives ~3days autonomy at 3kwh/day to 50% state of charge. 4kw of pv should be enough to recharge from 50% SOC in most climates. Whether 3 days autonomy is enough to avoid going below 50% SOC with no alternate means of charging, I don't know.
If the climate is such that there are longer runs of gloomy weather, the bank could be bigger and/or a generator added. If using a larger bank, I'd use lower voltage / higher amp-hour batteries to keep the number of strings to one or two.Off-grid.
Main daytime system ~4kw panels into 2xMNClassic150 370ah 48v bank 2xOutback 3548 inverter 120v + 240v autotransformer
Night system ~1kw panels into 1xMNClassic150 700ah 12v bank morningstar 300w inverter -
So eight batteries could do it.I plan to get lithium later.

2.1 Kw Suntech 175 mono, Classic 200, Trace SW 4024 ( 15 years old but brand new out of sealed factory box Jan. 2015), Bogart Tri-metric, 460 Ah. 24 volt LiFePo4 battery bank. Plenty of Baja Sea of Cortez sunshine.

Now I got 8 x 110Ah AGM batteries.I will make two 48v banks and then connect them in parallel48v 110 Ah x 2 = 48v 220AhI guest that would give me 10kwhMore than enough to run this toilet by 3 people every day.

Update:I've got 12 Gel batteries12v each110Amp eachAll setup to make 3 banks of 48v = 330Amph @ 48v330Amp x 48v =15840kwh15840kwh / 2 = 7920 kwh7920kwh at 50% of battery useI've got the cheap chinese inverter/charger 5kw, 80amp, 48vtested the toilet which is at 230v, all is working it burns a banana to ashes so i guess all good.
