Advice Needed, Solar on Roof of Chevy Equinox

I’m a travel nurse who bought a Ford Transit van in 2018 and slid into a pole on ice at 10 miles an hour in Midwest. The van was to be my conversion to going off grid while travel nursing. Now I know what rear wheel drive means....no go in snow. I traded it for the Chevy Equinox and am converting with a bed and pull out for cooking. I want to put 200 watts of solar on my roof. Thought about putting a cargo rack on and panels inside for stability an concealment as much as possible. Opinions/Advise needed and welcomed. No idea what I’m doing.
