What is the difference between 600v dc and 1000v/2000v? I am going to run 20' 12 awg wire from my 100 watt solar panel to small my solar set up.

Thanks so much

In the US, the maximum allowed residential PV system DC voltage is 600V, so any higher insulation value gets you better mechanical strength (thicker insulation) but no usable improvement in performance.
Commercial systems can go up to 1000V to ground or 2000V from + to - on a bipolar array system. NEC requires that when two wires, one +1000V to a reference point and the other -1000V to the same reference point, but overall ungrounded, are run in the same raceway they both must be insulated to 2000V.
SMA SB 3000, old BP panels.
