I want to convert my 4x 105 amp hour 12 volt agm batteries over to a 24v battery bank. How do I go about this?

I know the basics of how to wire in series and parrallel. I am thinking I want to run two of the batteries in series to get 24 volts. Then the other two batteries in series to get 24v. Then do I simply connect those two banks of 24 volts together in paralell?

Do I need to run the batteries in both series and parallel right from the start for some reason?

You've got it right: make two 'strings' of two 12 Volt batteries in series to provide the 24 Volts, then connect the strings in parallel. Do not have any connection between the strings 'in the middle'.

also keep in mind that each string has to have the appearance of being identical to each other so keep all interconnecting wires as the same gauge and length. this helps to prevent an imbalance that could cause excessive charging/discharging from one of the strings leading to a premature death to those particular batteries.

another point may be fusing the output of each string.
