Number of PV panels

I have around 1100 watts of PV panels. Ball park this is around 45 amps. My max limit is 60 amps for my inverter controller (6000 LF Aims) .I am not going to be able to achieve full sun all day. Maybe 4 hours at best unless I have a Sun tracker and that's not in my budget. I know PV panels seldom don't run at full capacity.
Would it be safe to run another array in another direction for evening sun? If so what is a good wattage?

If you're grid tied and just want max production, it's the best to point all your panels south at optimum angel, which depends on latitude.
If you're off-grid and evening production is more important for your system than mid-day production, then this is a viable choice.
